Pujo te Quick Mistimukh


Two recipes to satiate your need for narkel naru and barfi.Can be prepared fast and they fly off the platter even faster.

Instant Coconut laddoos
Ingredients:
Desiccated coconut 75 grams
Milk powder 5 teaspoons
Powdered sugar 5 teaspoons
Vanilla essence 5 drops
Chopped Pistachio 2 teaspoons
A small amount of warm water.
Some pastry cases
In a bowl put in the desiccated coconut, powdered sugar, milk powder and mix well. Now add small amounts of warm water to the mixture and make loose dough. Add the vanilla essence and mix it again. Now make small portions and roll into laddoos. Roll the laddoos in desiccated coconut powder and sprinkle a pinch of chopped Pistachio on top. Put each laddoo in a pastry case and serve.
These delicious laddoos should be consumed on the same day.


Beetroot Barfi
Ingredients
250 grams grated Beetroot
½ a coconut freshly grated.
2 tablespoons of Ghee
2 cups of Sugar
Chopped raisins and cashew nuts
Almond slivers for decoration
Heat ghee in a heavy bottomed pan. Put in the grated beetroot and coconut and mix well. Add the chopped raisins and cashew nuts and continue stirring.
Make sugar syrup by adding 2 cups of water to the sugar. Stir it on medium heat till a thick syrup is formed. To this add the beetroot mixture. Stir continuously till a sticky consistency is reached.
Remove from fire and quickly transfer it to a greased plate or tray. Spread it evenly with a spatula. Cool at room temperature. Cut out diamonds or squares when it is cool.
Arrange on a platter and decorate with almond slivers.
