What's her signature dish?
I am bewildered,confused...spent an entire day running the dishes through my head...what a painfully pleasurable experience that was ...you can guess.Anything that ma prepares is yummylicious ....yes I got it...It's her Doi Maach that beats all the rest....
The rings of Rohu gently smeared with turmeric and salt,
Shallow fried in mustard oil heated to smoking point.Set Aside
In another pan go three tablespoons of mustard oil
As it heats is dropped in a dollop of ghee
Aromas waft as to this is added two whole cloves,one green cardamom,
a small stick of cinnamon and a bay leaf;
in goes the masala paste of onions,ginger,tomatoes.
Salt to taste,pinch of turmeric and a tsp of coriander powder follow
this is sauteed till the oil separates and then the fried fish rings are added
The masala coats the fish and now its time for the doi
A cup of whisked fresh curd is mixed in....the maach simmers for a minute or two
Ma adds a tsp of her freshly ground garam masala and two whole green chillies:
A bit of sugar and a final tsp of ghee...The dish is ready....
